Nutter Butter Peanut Butter Brownie Delight

Ingredients
  • 1 9 x13 pan of brownies baked and cooled whatever brand you like
Nutter Butter Layer
  • 10-12 Nutter Butters broken up into large chunks
Peanut Butter Fluff
  • 3 cups heavy cream
  • 1/2 cup creamy peanut butter
  • 1 teaspoon vanilla extract
  • 1/2 cup powdered sugar
Drizzles & Pretties
  • 1/2 cup Ghirardelli semi-sweet chocolate chips
  • 2 tablespoons of heavy cream
  • 1/2 cup creamy peanut butter
  • Reese’s Pieces Candies
Instructions
  1. While brownies are baking or cooling…you can make the peanut butter fluff ahead of time.
  2. Using mixer, whip whipping cream until it starts getting fluffy.
  3. Add in peanut butter, powdered sugar and vanilla until continue whipping until peaks become stiff, keep in fridge until layering.
  4. Sprinkle an even layer of nutter butter cookie bits on top of brownies.
  5. Pour and spread the peanut butter fluff on top of of the cookie / brownie layer.
  6. Cover and put in fridge.
  7. Melt chocolate chips and add in cream after melted and whisk If it’s too thick, add in a little more cream. It should be thick and creamy. Drizzle with piping bag or snip hole in ziplock bag and fill with chocolate and drizzle on top of fluff.
  8. Pop peanut butter in microwave about 15 seconds and do the same drizzle method like the chocolate.
  9. Sprinkle some random mini Reese’s Pieces and transfer to the refrigerator overnight.
  10. Keep refrigerated or frozen until use.

ChocolaTess Trivia: Nutter Butter is a Nabisco brand peanut-shaped sandwich cookie with a peanut butter filling, which was introduced to the public in 1969 and they are peanut buttery delicious. They also have Nutter Butter Bites, which are round instead of peanut shaped. (Which is what I used.)

Even though it feels and looks like full-blown winter outside in some parts of the country, we are officially a few days from spring–a great time of year especially for baseball fans, gardeners, farmers and everyone who enjoys the warmer weather.

Spring is when plants begin to bud, and people care for their yards and clean house. Novelist and poet Margaret Atwood says, “In the spring, at the end of the day, you should smell like dirt.”

While we care for the things around us and for others, spring is a reminder that we should care for ourselves, too. Without self-care, everything else suffers including our well-being. Self-care is under our control; no one can do it for us. Self-care is not only important, it’s crucial.

Below are seven practical steps that experts in the health field recommend:

1.  Make time to eat well and exercise, even if you’re busy.
2.  Know when to say “no” to requests.
3.  Find a balance between work, family and personal time–protect your schedule.

Taking these steps is not always easy or without challenges, but worth the investment. I find that practicing these steps daily helps build good habits and a healthy way of life.

“Rich Fudgy Flourless Brownies”

 

                              “RICH FUDGY FLOURLESS BROWNIES”

Looking for a gluten free brownie recipe? Look no further! These rich and fudgy flourless brownies are perfectly chewy, dense and intense! No strange ingredients required 🙂

Yield: 16 brownies
INGREDIENTS
  • 6 tbsp. unsalted butter
  • ¾ c. granulated sugar
  • 8 oz. semisweet chocolate, chopped*
  • 2 eggs, room temperature
  • 1 tsp. vanilla extract
  • 1 tbsp. unsweetened cocoa powder
  • 3 tbsp. cornstarch
  • ¼ tsp. salt

 

DIRECTIONS
  1. Preheat oven to 350 degrees. Line an 8×8 or 9×9 inch square pan with foil (prefer a metal one), then lightly spray or butter, set aside.
  2. In a small saucepan set over low heat, melt the butter, then add the sugar. Once the sugar is incorporated, add the chopped chocolate, stirring until smooth. Remove from the heat beat for 2 minutes with a hand mixer or whisk. Add the eggs, one at a time, then the vanilla extract.
  3. Using a mesh sieve (or a sifter), sift the cocoa powder and cornstarch into the saucepan, then add the salt. Stir together, then beat the batter vigorously for 1-2 minutes. I like to use a hand mixer for this on a medium speed. Beat until the batter is smooth and shiny.
  4. Pour the batter into the prepared pan and bake for 22-30 minutes or until the brownies are set in the center, taking care not to over-bake. Remove from oven and let cool in the pan for 45 minutes before removing and slicing.
 
NOTES
*I like to use 2 semisweet Ghirardelli baking bars… as they are 4 oz. each.
-Fruit, nuts, chocolate chips/chunks, a sprinkle of sea salt, or a swirl of dulce de leche all make great additions to these brownies!

Quick Dulce de Leche

INGREDIENTS

  • 1/2 cup nonfat sweetened condensed milk
  • 2 tablespoons sugar

DIRECTIONS

  1. In a small saucepan, combine the milk and sugar and cook over medium heat until reduced by half, about 10 minutes. The mixture will turn the color of peanut shells

“HAPPY BIRTHDAY RUSS LESSOR”

“When someone tells you that … they have a  “BIRTHDAY” on the first day of “SPRING” – – how in the world can you forget that date?”

This PHOTO was taken at the “CRESTWOOD FAMOUS BARR” store maybe…  mid  1980’s – – and since I could not make up my mind  – – do I like it enough to have   it finished with all the correct colors and framed – – well like so many things in LIFE – – forgot about – – and just  leaving this ‘copy’ …  to just about fade… away.

Russ retired from the Monsanto Company – – having put in his thirty years – – bought a 40 acres FARM in Perryville, Missouri and for the most part had a very good life. He had lots of FRIENDS and invited  those that would like to do a little  “DEER” hunting  in November – -to his Farm – – and they would stay for at least a week – -and now I am trying to remember – – did they ever  have success at getting  a prize deer???

  • One thing that I really can  say is – – RUSS could really DANCE – – it is not always easy to find another “DANCE PARTNER” that can move on the DANCE FLOOR – – with such ease – – and really move the body – – I remember … because we did  “WIN”  several  PRIZES” at the different DANCES that  we attended.

“HAPPY BIRTHDAY to THOMAS F. BRADY – 3/19/2017”

This…  PHOTO of Thomas F. Brady was taken near the end of his LIFE – – he was still working for the Saint Louis Police Department and according to my MOTHER… he was a most honorable man.

Thomas Brady came to AMERICA from Ireland. As the story goes… where he lived in Ireland… they did not keep track of their birthdays like we do today.   So… when he arrived at Ellis Island to be processed… they ask Tom  as to his age – – not really knowing…  but,  to be sure that he was eighteen years old… he was asked to  reach over the top of his head and touch the bottom of his ear on the opposite side. Having done that… he was  then…  declared to be  eighteen years old.

When I first heard that story – – I almost died laughing – – because…  I believe that I was around fifteen years old – – and I was able to stretch my hand and arm  – – up and over to the opposite side of my head…  and touch the bottom of the ear – – so not even  being eighteen years old – – when I went out to apply for a job – – they told me that you have  to be eighteen – – and  so…  I told them  that I was eighteen and did get the job. I was happy to look older – – when it came  to getting work – – and… also  being tall  did help me  look old enough for the work.

My starting out with this  PHOTO of my GRAND-FATHER, Thomas F. Brady is  just leading to something important coming up soon – – and as most good stories – – one does have to have a great start  – – as all of the stories I write are for the “GRAND-CHILDREN” – – so that one day they can put all of this together in a book of memories – – so that they will know their ancestors as far back as I have been able to collect and research for  information – – and photos that just might be of interest to them – – come the day that,  I will not be here to answer the questions…  that – –   they  just may have – – when all of the “OLD” folk – – are dried up and all gone!

My GRAND-FATHER became a naturalized citizen of the United States of America in the year 1866 – – October 15. which was a MONDAY – – and that was five years after coming to AMERICA.

“SUNSET PARK”… received a “CLEAN-UP” for SPRING!

“What is the first… ‘sign’ –  in your  very own  backyard –  – that SPRING is here? – – – –  “Did you say?”  – – “Daffodils?”

Every year we have a spot in the back yard  – – where the previous owners  – – planted Daffodils – – and no matter what happens – – like “clock” work  –  – they come up – – just when  we are expecting “SPRING” weather to show up!  And…  what I like is to see them – – all… so  nicely clustered together  – – and even when it is still a little  on the   “too cold  side”  for them – – they just like to stand  on their own – – standing up against the strong  WINDS…  that come up from “SUNSET PARK.”

Spring is just around the corner but what date does it officially start on?

Symbolizing rebirth and new beginnings, the daffodil is virtually synonymous with spring.  –  Spring  forward – – all new life on the way!

Associated with the tenth wedding anniversary – – –  When the bright yellow daffodil pokes through late winter’s ground, it’s like a long-awaited friend returning home and a birth flower anyone would be proud to call their own. Symbolizing rebirth and new beginnings, particularly when presented in an abundant bouquet, daffodils promise happiness and joy.

When making up a bouquet of these beautiful  flowers – – always give a nice size bouquet –The March birth flower and the 10th wedding anniversary flower, a gift of daffodils is said to ensure happiness. But always remember to present daffodils in a bunch – the same legends that associate this cheerful flower with good fortune warn us…  that when given as a single bloom, a daffodil can foretell misfortune.

TODAY… SATURDAY  Morning – –  at least 20 vehicles were parked in various locations – – and the “VOLUNTEERS” were marching  all around into small  groups – – with  plenty of bags and  hand equipment to pick-up trash and  some workers even used power equipment to cut out some dead stuff – –  just making this a day  of hard work – –  so – – that  all the beautiful plants and flowers – – rest rooms and walk-ways  – – will  just be  so much more  inviting  – –  to  everyone  visiting the “SUNSET PARK”  and will appreciate  – – just having such a beautiful place to bring the whole FAMILY – – for fun and games and  to enjoy  those “out door meals.”

When your very own  “back-yard” is not large enough – –  for your family and guests  to have plenty of room to run and play games – – may as well… enjoy a nice  ride…  over to your “SUNSET PARK!”
