“The Ultimate Brioche Buns for Burgers Recipe”
Ultimate Brioche Buns: Your Burgers Deserve Better Than Store-Bought
Ingredients
- 2 1/4 cups (11oz/319g) all-purpose flour
- 2 tablespoons sugar
- 1 teaspoon instant dry yeast
- 1 teaspoon salt
- 2 large eggs
- 1/2 cup (8 fl oz/225ml) whole milk
- 1/4 cup (2oz/57g) butter, softened
Instructions

In a large bowl of a mixer, combine all-purpose flour, sugar, yeast, and salt.

In a separate jug whisk together the milk and eggs.

Pour the liquid into the dry ingredients and knead on medium speed with the dough hook attachment. (Tip: hold back a little liquid in case you don’t need it all to make the dough come together)

Once the dough comes together and there is no dry flour add in the sliced, softened butter. Continue to knead the dough for another 6-8 minutes. You will notice it is a soft, shaggy dough.

Turn out the dough onto a lightly floured surface and shape into a smooth ball. Place it into a greased bowl, cover the bowl with plastic wrap (or a shower cap), and keep in a warm place for 1 1/2 – 2 hours.

To make your Hamburgers: Divide the dough roughly into 6 (3 ¾oz) pieces. Shape each piece into a smooth ball and place it on a baking sheet lined with parchment paper to proof. This should take about 45 to 60 minutes. (Shaping the dough into a smooth ball is very important. Watch how, here.)

Once proofed, brush each bun with egg wash and sprinkle with sesame seeds.

Bake at 375°F (190°C) for 20-22 minutes or until they are golden brown.

Store buns in an air-tight container at room temperature for up to 2 days. Because of the butter and eggs, they can spoil after 3 days so you can either keep them in the fridge or in the freezer for longer shelf life.
Gemma’s Pro Chef Tips for Making Brioche Hamburger Buns
- These buns can be kept in the freezer for up to 6 weeks, so there’s no reason not to make these for the long summer months!
- To make sliders, make smaller sized pieces, around 2 1/2 oz.
- A shower cap works great as a cover for proofing bread dough. Instead of plastic wrap, the shower cap is a great, reusable tool to ensure that no air can harm your dough!
- Feel free to introduce some whole wheat flour to this dough for more fiber!
- While making your dough, don’t be afraid to hold back on the liquid. You can always add more, but you can’t take it back.
How Do I Store Brioche Hamburger Buns?
You will want to store brioche hamburger buns in an air-tight container for only up to 2 days at room temperature. Since there is a lot of butter and eggs in brioche, it can spoil after 3 days. You can keep them in the refrigerator for longer shelf life, or freeze them for up to 6 weeks.

“Best Wishes to Sister May Emilene Gander”
“Sister Emilene’s Birthday is TODAY”
“Sister Mary Emilene” was one of the “BEST of NUNS” at the German St. Vincent Orphanage and she, just so happened to become one of the very special people in my LIFE, always, until the day she went on to her extra special journey to HEAVEN!
“Sister Emilene” a FRIEND, that someone extra special, I have always remembered on all occasions and still forever remember her BIRTHDAY was on the 21st of JUNE and with a real nice and LOUD singing voice, that I have, that can be heard all the way to “GRAND AVENUE” and now with a one, two, three, and with all of us together singing, “Happy Birthday dear Sister Emilene!”
The following letter, regarding “Sister Emilene” her LIFE and FAMILY and as you will read, she was also an “ORPHAN” and in the very same “GERMAN ST. VINCENT ORPHANAGE” … so I feel that with the knowledge she had of the situation of “ORPHANS” she had a much better attitude with the children, that were in the same “ORPHANAGE” and in my case, she became a personal “FRIEND” to me, all those years, that she and I were in the Normandy, Missouri location.
You just might want to say, “She was a real “FRIEND” to me, till the very END!” Many years later, after my leaving the Orphanage and when, “We, my Family” moved back to the Saint Louis area from Florida, I had called her, to make arrangements, so that I could bring her to my home for the day and stay with us, for dinner.
My sons Lee and Al would play the piano and organ, and we would always have a very nice time together, something so different than just a short visit with her, at the Orphanage! I always thought that it was good for her to have somewhere to go, that was more entertaining for her and even FUN, including the long drive, and at different times of the year, with the seasons changing, lots to see and talk about forever!
“I feel that, making “GOOD FRIENDS” and for a “LIFETIME” is really what, we were planted on this “EARTH” to do!” D.V.
“The following letter… regarding Sister Emilene… her LIFE and FAMILY, was sent to all the NUNS in their different locations and to FRIENDS, and I was lucky to be on her contact list… listed as special FRIEND.”

“The three Maxim’s of ancient Greece”
The three Maxim’s of ancient Greece are “seriously sage advice” expressed in three very simple phrases: 1) Know thyself. 2) Nothing to excess. 3) Surety brings ruin. While these three pithy pearls of wisdom were initially articulated nearly 2,400 years ago, their acumen and usefulness is just as important today as it was then.
“Know thyself” can be thought of as insight (literally “in sight”), seeing inside ourselves, or assessing the why’s and what’s of what we do, and who we are. To live an effective life we should be constantly and endlessly scrutinizing our emotions, deconstructing our motivations and examining our beliefs, shifting attention away from external events to inner experiences. To assess what is going on inside ourselves, that’s affecting how reality is showing up for us.
“Nothing to excess” is about living with moderation or, as the religious scholars like to say, with temperance. There’s nothing that we can do that cannot be moderated. Eating without gorging, working without slaving and drinking without getting drunk are all examples of human activities that can be enjoyed, but enjoyed with restrain.
Finally, “surety brings ruin” reminds us that to live effectively, we need to live scientifically. Our beliefs must be examined as if under a microscope. What we know for sure should be subject to critical thinking. How is it that we know what we know? “Surety brings ruin” warns us to beware of a certainty, because in the words of Mark Twain, “It ain’t what we don’t know that gives us trouble; it’s what we do know that just ain’t so.”

“How to Make Your Own Face Covering”
Non-sewn Face Covering
Materials
- Bandana, old t-shirt, or square cotton cloth (cut approximately 20”x20”)
- Rubber bands (or hair ties)
- Scissors (if you are cutting your own cloth)
Tutorial
Make sure your cloth face covering:
- fits snugly but comfortably against the side of the face
- completely covers the nose and mouth
- is secured with ties or ear loops
- includes multiple layers of fabric
- allows for breathing without restriction
- can be laundered and machine dried without damage or change to shape

4. Quick Fix For A Better Fit
If the ear loops on your mask are too big, it won’t rest securely against your face. To quickly fix the problem, criss-cross each loop before hooking them around your ears.
5. Avoid Ear Pain
Does wearing your mask lead to pain or sensitivity behind your ears? Instead of securing the loops behind your ears, hook them together with a paperclip around the back of your head. Or you can sew a button on each side of a hat or headband and hook the loops on those instead!

When I think back to when WWII was front and center in the early 1940s… all AMERICANS were signing up and doing whatever there was that they could do… that would also keep everyone encouraged to work even harder… because, we all wanted this WAR over… “Over There!”
This music had something about it… that just makes you want to turn into a “SuperMan” and do whatever is necessary and just as fast as you can… to do whatever your part will be… to get FREEDOM for all Nations and do it NOW!

This recording is so old… but even so… just to hear George M. Cohan sing it… even at my age… I would be willing to sign up to do my part … for FREEDOM of all AMERICANS… right NOW!
My Daddy had already put in six years in the ARMY and when AMERICA was needing men again… he would make … in our kitchen… Fudge candy and Divinity Candy as my brothers and I would get to be the testers and we sure did enjoy this whole process.
Daddy would box up several boxes and mail to those locations that will pass on to our Service Men and Women. When Daddy was in the Army… his Mother often sent to him special “Home Made Cakes” and since most of them turned into boxes of lots of sweet crumbs… he decided small boxes of candy would ship better.
Another important thing that we would all do… would be to see every “Parade” in the Saint Louis rea…something about showing the young men in uniform that … all of us at HOME were with each SERVICEMEN and WOMEN… with our LOVE and in Spirit as we went to Church every Sunday and were praying for AMERICA to make a quick end to this needless WAR!
There is something very powerful in the music and the words… like in the above song… “OVER THERE. ” Everyone knew the words and could belt that song out so loud and clear… it was a PRAYER and also… just as if we were dropping bombs on those Countries that wanted to bomb all those parts of the world that did not want to fight and lose their FREEDOM!
It seems to me… that we need some powerful songs that all Americans can sing together… with a message clear and dear to all of the hearts of AMERICANS… we all want FREEDOM and PEACE to live healthy and well together… without that “Trojan Horse” that is silently being usher in our back door!

“That’s an Irish Lullaby”
“Too-ra-Loo-ra-Loo-ral”…
“That’s an Irish Lullaby” – Too-ra-loo-ra-loo-ral” … the music sheet for this “Scottish-Irish” Celtic Lyrics song, so often sung in the movies by Bing Crosby is one song that I could listen to… over and over and never get tired of listening!
Posting the “Piano-Player Cat – Pearl” yesterday just brought to mind… that it would be wonderful if “Pearl” could play “Too-ra-loo-ra-loo-ral” – “That’s an Irish Lullaby” … because I just know that “Pearl” had to be an Irish Cat… living in and with an Irish family and we all like good folk songs and music!
When I was a very young girl … we had radio and record players… and at our home, we had large baskets full of records… all the best of music… lots of light “Opera” … because my Mother would sing along as she had a beautiful voice.
If my Mother felt like singing, she would and do so without the background music of a record and also without having the radio playing. MOM with her terrific voice singing.. was always just the best of sounds to me! “Then and when” … we were living at the “Orphanage” … my Mother brought the sheet music for “Too-ra-loo-ra-loo-ral”…. for me to learn to play… but without lessons it was difficult…
There was a girl or two that were learning to play the piano and even one, a “Lucille Yoergler ” learning to play the accordion and they would play the song the best that they could, as it did take a little more than they had to give… to make it terrific!
Most of the NUNS were German and not of Irish descent… so not as interested in playing an Irish song just for me… and those that could play the song just might once and never again.
So, for me the most important thing in life would be… and that is… if I was “LUCKY” to have children… they would learn to play the “PIANO”… if they never ever learn how to do anything else!
As it goes… I was blessed in that both of my sons did learn to play the “PIANO” as well as several other musical instruments and they can read and write music… and one other extra gift that they received… they can listen to NEW Music, before the music sheet is published for SALE… and write the notes down that they hear.
So, now I get to hear the best music that I want to hear and performed by my sons, always in the here and “NOW” and just as often as I want to hear it!
In the 1970’s and 1980’s… I had gone to the Orphanage and would bring to my house a couple of the NUNS… some that were still living there… so that, they would enjoy dinner and lunch at my house and while at my house… they would enjoy playing the Lowery Organ that my sons would also play… so now we would have plenty of good music and song.
The “song” would be my department and of course “great singers, like me” are always told… “Don’t quit your day time job!”
The name of the game now… time spent with these NUNS at my house was fun and enjoyment… nothing like this ever took place… when I was a little girl in that Orphanage!
The best memory was of “Sister Margaret Mary”…a very good friend of mine who, just loved to play the “Organ” and was a natural, as she also played the “Church Organ” at the Orphanage.
When she would play my favorite piece of music… “Too-ra-loo-ra-loo-ral” … those feelings you get when you hear music being played to perfection… the music was right there… hearing and seeing… so much so…that I almost expected “Bing Crosby” to start singing the song … just as he did in the movie!
