Gemma’s Pro Chef Tips For Making English Sticky Toffee Pudding

  • Always double-check to make sure the pits are removed from the dates. Even if you buy pitted dates, one can sneak through and you don’t want that! 
  • Serve with my Signature Salted Caramel Sauce. Make it in bulk because it keeps for months in the fridge!
  • These little puddings freeze wonderfully for up to 4 weeks! 
  • Make the puddings the day before you wish to serve them. As they sit overnight, the flavor just gets better.
  • Brown sugar is an important ingredient to make sure you get that wonderful caramel flavor. If you don’t have brown sugar on hand, you can make your own with my recipe
  • Be sure to add the salt! Salt brings out all the fantastic flavors in this pudding!

How Do You Store English Sticky Toffee Pudding?

English Sticky Toffee Pudding can be stored in an airtight container at room temperature for up to 4 days. These puddings also freeze very well for up to 4 weeks!

My English Sticky Toffee Pudding recipe is a delicious, caramelly, dense, sweet cake that’s made in a muffin tin instead of being steamed!

Servings: 12 puddings

Ingredients

  • 1 ¼ cups (6½ oz./177g) dates
  • 1 ¼ cups (10floz/282ml) water
  • 1 teaspoon baking soda
  • 4 tablespoons (2oz/57g) butter (softened)
  • ¾ cup (6 oz./170g) granulated sugar
  • 2 large eggs (room temperature)
  • 1 teaspoon vanilla extract
  • 1 cup + 2 tablespoons (5 ½ oz./155g) all-purpose flour
  • 2 teaspoons baking powder
  • 1 teaspoon salt
  • Signature Salted Caramel Sauce  (to serve)

Instructions

  • Preheat the oven to 350°F (180°C). Generously butter a 12 well cupcake tray and set it aside.
  • In a small saucepan over medium/low heat, bring the dates and water to a boil. Turn the heat down and simmer for roughly 8-10 minutes or until the dates are soft.
  • Remove from the heat and add the baking soda into the hot date mix to activate it. It will fizzle up.
  • Blend the date mix until it is a smooth paste. Do this in a food processor or using an immersion blender. Set aside to cool down.
  • In a separate bowl, cream together the butter and sugar until light and fluffy. You can do this by hand or using an electric mixer.
  • Stir in the eggs one at a time followed by the vanilla until fully incorporated.
  • Next fold in the flour, baking powder, and salt.
  • Lastly, pour in the cooled dates and mix until just combined.
  • Pour the batter into the cupcake trays and fill ¾ of the way full. It will make roughly around 12 sticky toffee puddings.
  • Bake for 20-25 minutes or until firm on top and they are golden.
  • Enjoy warm with my Signature Salted Caramel Sauce and vanilla ice cream. Store in an airtight container at room temperature for up to 4 days. They also freeze really well for up to 4 weeks.

Ash Wednesday signals the beginning of Lenten season for Christians. It takes place 46 days before Easter and the day after Shrove Tuesday.

Ash Wednesday services focus on the death and repentance the ashes represent. In many churches, the ashes are made from the palm branches that are burned from the previous Palm Sunday service.

Following a service or mass, the pastor or priest will invite their congregation to receive the ashes on their forehead. A cross pattern or other similar mark is made.

This solemn day begins a time of meditation, reflection, self-examination, study, and contemplation when Christians consider their own mortality and sinfulness in preparation for Easter.

“Remembering My Sisters Kathleen and Eve Karen’s Birthday”

Remembering my Sister, Karen”

“Karen McClarren Scott and BABY…make three”

Is there ever a more perfect picture… than… when you see a new MOM with  her very first baby?

This is my little sister… “Karen M.  Scott”  rocking baby  “Christopher M. Scott” when they first lived in Arnold, Missouri. 

Looks like… they are both getting some “SUN SHINE”  while having a FUN time swinging low and  as we all know … that  the new born baby  “CHRIS” should  and will now receive some  extra fresh “Sunshine”   which is  a  very good way to get those extra  special  VITAMINS, too!

“KAREN” sent this PHOTO to me when I was living in Fort Lauderdale, Florida.  Since I would be coming up to Missouri for VACATION in JULY … and with the whole FAMILY  … there were a few things in FLORIDA…  that she wanted me to bring to her.

The one  and most important item… was a special “swimsuit”  and  then… some  other  special surprise items…  that she could use in her house, but would  be items indicating  they were made and or came from Florida!

 When you live in “FLORIDA”  and on the Coast…  bringing items that can be used and or just used to decorate a spot or two… as a little reminder that you had a visitor from Florida… just makes such a good impression … to have  these items sitting around… for  a show and tell to your friends to see and then hear  how the  whole story…  will finally  be  one that develops for more fun and games.

 After all is said and done… she just wanted to be reminded… that she, too…  would be taking a trip down to see me!

“Karen and  her son, Chris”  are both in Heaven as Karen died just two weeks,  before her “50th” Birthday…  and her son, CHRIS died on a day…  that none of us will  ever forget… it was  on July 17th,  2015 .

July  the 17th…   just so happens to be … our  “Aunt Irene Riley’s” …  Birthday!     Just something to think about?

One can not ever forget FAMILY … no matter where you are …  no matter what you are doing…  we all think about the  FAMILY …  and always…  will hold them in an extra  special place in the “HEART” … just  because we know… there will be a “DAY” …  when we will…  all be together  in that SPECIAL PLACE …  that our CREATOR has reserved…  and just for us!     D.V.

Happy Birthday Eve Karen Francesca McClarren Scott! 

Just to think this would be your  “75th” birthday.   And,  would like you to know that no matter where one goes when they  take leave of this world  – all souls are somewhere and you will never   ever be forgotten. So, in this electronically  age of messages sent – they all will be known by someone who will know someone else and before you know it   –  all messages of  “Love”  are received.

You and your life is one that should really be published. I know that –  – that  could almost be said about anyone   –  but your life could have been better and should have been much   better  –  if only  there would have been people who really cared about the life of another,   especially the lives of small children   –  instead of only their own selfish desires and the love of free money which is the cause of the break down of the family life in America.

As I think back on all of  the problems and sorrows – – that we must endure here on EARTH – – for a short time – – that  we all will receive a much better place in ETERNITY – – with our CREATOR – – and in that day there will be no more pain and  no  sorrow – – for all of the  “TRUE BELIEVERS”  – as we are here only temporarily – – but soon in  a place especially prepared by  our resurrected SAVIOR!

Almighty  Yahweh  bless Eve Karen   – today  – forever    and always! D.V.

“The rest of the  STORY…. from February of 1946…”

My  younger brothers… DENNY  and TOMMY  and myself  were in the German St. Vincent’s Orphan Home…because my Mother needed a place for us to stay… while she went to the hospital …  to give birth to our “sisters” …which were  ” identical twins”
KATHLEEN and EVE KAREN  McClarren.”

Since we  each are  a  year apart in age and each of  us was in a different grade in school. I was in the third grade – DENNY was in the second grade – and TOMMY was in the first grade.

Also… in those days, the MOTHER,  “Superior of the Orphanage” would visit each class-room… when our report cards were to be given out, and there was a “REWARD SYSTEM” attached to those grades, that you received.

Still…today, when someone does something , that which to me seems to be superior to  that which  is also  expected… I always say…”You deserve a “GOLD STAR” on your report card, because… way back in the day – when I was a kid – we received  “fifteen cents”…  for each GOLD STAR!”

 So the “GOLD STAR”  was given for grades 95 to 100 – – and a “SILVER  STAR”  worth ten cents was  given  for grades  90 to 94 – – and the STARS… RED and BLUE were worth five cents and for the grades 80 to 89.

So… if you could …  you did put forth that extra effort…  to earn a few nickels and dimes.

Another occasion…from time to time…”MOTHER  ERENTTRUDE ALTHOEFER”  (Sister of Christian Charity) would  be making the rounds to the classrooms and she would enter that classroom with someone at her side, that would set up a table with “PRIZES”  and these were for special recognition.

So this is the rest of the “STORY” about the picture frame and picture of that little girl on her knees  and those two  “ANGELS” titled “HER PRAYER” …  which, when I  first saw that on the display table… wanted  it,  for my baby sister, Karen!

During the HOLIDAYS… my  little brother, TOMMY   was taken to each classroom to recite… “Twas the NIGHT before CHRISTMAS”…  in that part of his make-up  and that would be… from the day he was born… he had  that  talent of being an “ENTERTAINER” … in that he knows the words of everything and if singing or reciting something… he is on “STAGE” …  hands and face and every movement  is  just full of joy  with added flair.

AT that time, “TOMMY” had been entertaining  everyone and  in those days…  it was like seeing a “LIVE  STAGE SHOW”…  so “TOMMY” was allowed to have first pick of all those items that were to be given out  as trophies.

 Since…  I had spited the “HER PRAYER” …  knew TOMMY could pick that as his “PRIZE” – I ask him to select that “PRIZE” …  and who received prizes after that … who remembers …  I was just so happy…  that we had the best of gifts … so that we could give to our MOTHER…  when she would come out to see us on “VISITING SUNDAY”   … an extra  “special gift” to hang  on the wall … over and above our baby Karen’s crib!

To have a “Guardian ANGEL” is what I grew up with,  and we always said the “GUARDIAN  Angel”  prayer in our morning and night time prayers, and I feel it is very important to remember… that as we go through LIFE…  we need guidance and the ALMIGHTY will send that guidance,  if we will… but,   only  “Ask.”

Just today was reading “MATT 18:10” – “for I say unto you…  that in heaven their “ANGELS”  do always… behold the face of my FATHER, who is in heaven.”

So… with that verse from the “BIBLE”… I believe that the Almighty is sending us HELP …  if only… we will ask?  D.V.

“Happy Birthday to the McClarren TWIN Sisters”

Remembering “Eve Karen McClarren Scott”

Regarding the above photo… Karen with big brother Tom, aka… “Mr. Wonderful” … There is a very special story… that applies with this photo… that story may be found somewhere in  the posted stories… something… that you would not believe… that, only I could  have done… way back there and then!

Karen and Kathleen…remembering you both, on your BIRTH DATE…today in 1946.

Have to remember my sisters,   Kathleen McClarren and her identical twin, Eve Karen Francesca McClarren Scott (01-31-1996).

Life here,  on Earth is…   just too  short for some in our family… and we will never ever  forget you!

Also,  in  our remembering …  both of you  –  had Masses said at …  St. Francis Assisi on Telegraph road.  Have to believe that you are both with the  “Angels and Saints”, spending  a good amount of time   with  our…  Almighty Yahweh!   

And Now…  our brother, DENNY  Jr.,  is with you both.

 

This  next photo is “EVE KAREN” age seven (7) and with big bother,  “DENNY, Jr.”  on his GRADUATION  DAY … celebrating with an all day PICNIC at the German St. Vincent’s Home and Grounds… Food and Rides for all guests that day.

 

“Next below, we all are  together on a “Visiting Sunday Afternoon”  and,  that is our DADDY holding baby “EVE KAREN” and then …  standing together…TOMMY, and DENNY, Jr., and MARY ELLEN …  and we are standing in the “Apple Orchard” some of the best green apples on those trees…for making “APPLE BUTTER” which we had on the  “HOME” made bread  each and  everyday.

And this  is a last PHOTO of “EVE KAREN” and her husband “JIM SCOTT” on vacation in “Hawaii”   and they are shopping in a Jewelry Shop… for something very special for Karen… and, as you can see… with that wonderful smile on her face… “KAREN” just received some very fine jewelry… and when you receive diamonds…  you really do smile “BIG” for the camera. 

Just could not believe it…  when JIM called me, to tell me… that, my sister, KAREN died just two weeks before her “Fiftieth BIRTHDAY” … and, today she would have been “75” .

So… here is  to seeing you… again someday  and also DENNY JR.,  who is up there with you, KAREN  and your identical, Kathleen, just … save a spot for all of  us to be together …  on “CLOUD NINE”  as I have posted  “PHOTOS”   of  “DENNY Jr.,” on his very  ‘own’  “CLOUD NINE” …  that is a very  “HIGHLY RATED” CLOUD … to be on … when you like to  just float by … while watching over all the rest of the FAMILY.

That “SAILOR” out-fit that  “TOMMY”  is wearing… is the very same  “out-fit” that  “DENNY” wore on his trip to “OHIO” … when he was  only “four years old” … wrote about that trip a couple weeks earlier, and posted the news-paper clipping along,  giving all of the particulars of that   long “trip”  that little  DENNY took … all by himself … when “DADDY” had to go to  “CALIFORNIA”  to work on the  “NAVY SHIPS”   during WWII – – just some the exciting things that the  “McClarren”  children did during those “hard” times  of WWII, and we NOW all have  lived  long enough to talk about it!

“Just some of the memories of our little sister, EVE KAREN” …  just good to have a few  old  PHOTOS …  for a “BACK-up” – otherwise – no one would believe…  half of  the good old days… when we were  in the bad times of  a  “WAR” and what  “AMERICANS” all did to help  our “COUNTRY”  WIN…  but we  “ALL”   just did what we could, and always felt good… for that which…  we were  all… able to do.!”         D.V.

“Take  a Note”… This is the day that  “EVE KAREN” was born, and her identical twin sister, “Kathleen” only survived a week  after their birth… due to a crushed lung.

Each “baby” weighed  in at eight and a half pounds.  That is just too much “baby” to be carrying for  a small frame woman … only five foot tall.

3 Ingredient Cookies? It's true and they are soooooo good!

Hi Bold Bakers!

Sometimes, being Big and Bold means going over the top! Stacked layer cakes, complex flavors and fancy techniques are all standard fare at this point. But the more I bake, the more I find how much all the great bakers and eaters out there also appreciate some simple classic treats as well. Each week, I look forward to sharing some new recipe ideas, but this week I’ve decided to show you all how to take some old favorites and transform them into something super simple and approachable! I’ve created three amazing 3 Ingredient Cookies recipes that take our classic favorites and pare them down, using only 3 basic ingredients, and only taking about 30 minutes from the measuring bowl to your mouth!

No cookie repertoire is complete without a Peanut Butter Cookie Recipe. My recipe is easy as can be. These bake up to be lovely and impressive with the classic cross hatch pattern on top and they’re sure to be a crowd pleaser.

My next 3 ingredient cookie recipe is actually just 2! I don’t think I’ve ever made anything as simple and satisfying as my Coconut Macaroons. These are made with sweetened condensed milk and coconut, baked to a lovely golden brown then dipped in chocolate, making it 3 ingredients. These are full of coconut flavor, super chewy, and perfectly sweet. This is the last macaroon recipe you will ever try.

My last 3 ingredient cookie recipe is an Oatmeal Chocolate Chip Cookie. I love anything that has toasty oats like my homemade Hob-Nob cookies. These are beyond simple and naturally healthy, as they’re free from oil, added sugar or dairy! The magic ingredient in these cookies is banana. That’s right, 2 bananas, oats and chocolate chips are all you need. Reading this right now, you’re just 15 minutes in the oven and 3 ingredients away from any one of these absolutely gorgeous cookies. Enjoy!
