“Classic Cornbread Dressing”

Classic Cornbread Dressing
Makes 10 to 12 servings
Ingredients
  1. 1/2 cup bacon drippings or unsalted butter
  2. 2 cups diced onion
  3. 2 cups diced celery
  4. 1/2 cup chopped fresh sage
  5. 20 cups (1-inch cubed) day-old cornbread
  6. 6 cups low-sodium chicken broth
  7. 4 large eggs, beaten
  8. 1 tablespoon kosher salt
  9. 1/2 teaspoon ground black pepper
Instructions
  1. Preheat oven to 350°. Spray a 13×9-inch baking dish with nonstick cooking spray.
  2. In a large skillet, melt bacon drippings or butter over medium heat. Add onion and celery; cook, stirring occasionally, for 15 minutes or until tender. Stir in sage, and cook for 3 minutes.
  3. In a large bowl, stir together vegetable mixture, cornbread, and all remaining ingredients until well combined. Spoon into prepared pan.
  4. Bake for 40 to 45 minutes or until golden brown.
Notes
  1. When measuring the cornbread cubes for this recipe, do not pack the cubes or crumble the cornbread into the measuring cup; simply add them to the cup. Twenty cups might seem like too much cornbread, but the bread will break down some during stirring and baking, and there is no other bread in this recipe to supplement it.

Keep this recipe ready and handy for next week – – It may take a few minutes more … to make “Dressing” from scratch – for that beautiful ” TURKEY” – – that is just so delicious looking on the Dining Room Table – – –  than to just throw   one of those   “quick in the box” deals  together – – but –  on this one “DAY of THANKSGIVING” – – just be grateful  – – that your guests for this special DAY – – will really give THANKS – – that their “HOST” went “FIRST CLASS” for this DAY to remind you…  to  really be GRATEFUL and THANKFUL to our ALMIGHTY CREATOR – – that you were able to celebrate “THANKSGIVING DAY” with a  wonderfully created  meal… made with LOVE!

“What is happening in South Dakota’s Black Hills?”

November 14, 2016

Denizens of South Dakota’s Black Hills are flummoxed by a loud boom that occurred last week and cannot be explained by authorities or scientists.

Taking place last Monday afternoon, the mystery sound shook numerous homes in the region and left residents concerned.

Media coverage of the event led to more witnesses coming forward and expanding the range of the sound all the way to neighboring Nebraska and Montana, encompassing a 200 mile distance.

As one might expect, theories for the source of the sound are in abundance but it appears that nothing yet can explain the boom.

An earthquake, something caused by an airplane, a meteor and a mining blast have all been ruled out as the possible origin for the perplexing event.

Whether the cause of the sound can ever be determined remains to be seen, but there is one intriguing footnote to the story which deserves mentioning.

Research by the Black Hills Pioneer unearthed an account from the famed Lewis and Clark expedition where they reported hearing a mysterious boom while traveling through Montana in 1805!

Although the mystery boom phenomenon seemingly only emerged in recent years, this tale from 200 years ago suggests that may not be the case and perhaps there is a deeper connection yet to be found.

Coast Insiders looking to learn more about the many reports of mystery booms over the last few years can check out several examination of the phenomenon by investigative journalist Linda Moulton Howe here, here, and here.

“Music Lessons for EACH CHILD – NOW!”

When you think back to when you were a kid in  Grade School,  –  Do you  ever take time to  think of the  Names  –  old  Friends – what do you remember and why? What in the world could they be doing,  Today? It must be the change of weather and the  Stores with all the  Holiday Decorations and  ideas –  get you to thinking of all the get-to-gathers  – and who will I see  – from long ago? AND… the meeting of  “OLD SCHOOL FRIENDS” – is one of the best things – – we can do – – when we get so much older – – just to be able to  “MARVEL” – how we all look NOW – – after all these many years!

Dorothy Jorgensen  and I ran into each other near the O’Fallon Park, in north Saint Louis, Missouri in the early 50’s, and had a real good time . We should do it again?   Linda Crow and I …  would listen to  the radio   – – – – this also in the very earlier  1950’s.   We would push our beds closer together  to hear  the radio    –   as late as we could or until we fell asleep.  We did not want everybody in the “Dormitory”  to know we had the radio on – when it was “light’s out time!”   It was a good thing,  that the  “Nuns” “rosary beads and keys”  would hit their knee as they would be walking down the corridor halls  — it gave us  a     “head’s up  –  trouble on the way”   –  kept us out of harm’s way! (Each “NUN” had their own way of walking – and the  way their beads would clang together – – each NUN – – had her own distinctive – – “announcement noise”.)

Lucille Yoergler, one of the best looking gals, and with such beautiful natural curly hair. When “LUCY”  would be doing   her   music lessons  – – on the “accordion” – – she was  always eager to try playing a new piece of music – – especially   –   that which  –  I had just received from my Mother!

I did…  want to learn to play the PIANO – – but the “NUNS” just thought that  – – that would be something…  that “My parents”  would not be able to afford – –  in addition to the money that –  they were collecting from my FATHER’s pension – – $ 10.00 for each of us  – and each week-so,  I could only get to watch – – some of my friends… while they did their lessons.

Today , my  sons and grandchildren all   – -have taken  “LESSONS” – – only because I did not get to have lessons – – and they all have talent – – and can play  – – so very well – – just inheriting  natural  musical talent,  and – – now,  when  playing music  –  old memories keep a coming my way!

“All children… should receive “MUSIC LESSONS” in school – – and free of charge!”

“Tis’… Better to GIVE as WE Can!”

November sure is the month to Remember and give Thanks, to  Our Creator and Giver,  the only “ONE”  –   which  gives to us…  all the wonderful and good gifts, He alone  gave  and  put  these  wonderful  treasures into our Life!  I am   Grateful and Thankful, for  so many  memories!

I feel  like the ‘Little Old Woman, in the Bible’ who found the two (2) mites, she had lost! I am so  ‘Happy’ to have found two (2)  Autograph Books, from my grade school days  – I just could not find them for the longest time! My search took  me into every little nook  and obscure place,    and places I would not even have dreamed  a possibility  in which… to find them?

My son, Al  was over to pickup some music CD’s, and as we were looking  through the boxes  – a very small box  with little thin books, 8×5 and less than a half-inch thick booklets  – crammed  together like sardines in a can! It’s a wonder…  that we even took the time, to  look   and  then to find the  the Autograph books, amongst vitamin and health booklets

I am so grateful and happy  that these books  are now found  –  will now have to re-read  all the well wishes and happy thoughts  –  all the blessings that  the Nuns  wished  for me  onto  the road of  ‘Life’  – to follow  –  and I have traveled!  AND…  For all those who requested…   that the ALMIGHTY YAHWEH …  to bless me,  Thank You!  – – – ” I have been truly bless!”

“Thanksgiving Day” will be on the “24th” of November this year, 2016  – – so  – – let us all start  to give some thought to the good  – – that we have received this year – – and if not earlier – – start giving “THANKS” now! It is only in the generosity  – – that we are guided to “GIVE” some of  our abundance – – we just may  have plenty  to share – – to those that are in need, NOW!

Everything that we have – – we only have for a while – – so  – – with that thought in mind – – to give to those in need – – we should be  “HAPPY TO SHARE” – – as we will receive even more – – to give and share with others!

“Learning to MAKE…”SOME THING”… in the 1940’s

On Mondays, from 1:00 to 2:00 pm, instead of going back to classes at school, we assembled at the tables in the playroom  This was for Girls only! Each girl had an assigned seat,  and each Monday, you were sitting ready to receive  your  bundle of  “Handiwork”  to  work on. Each girl  was taught by the  Nun in charge, Sister M. Colombo. You would learn to do embroidery work, and also to crochet, and she would find out what was best for you to do!

Since, I had not done any of this fancy stitching, had to start with a plain white cloth with  a lot of xxx’s on it, and told how  to pull the threaded needle up and down across the area . Then told to turn the hoop and start where I had left off and make an “X” a complete  “Cross-stitch.”

Now that I think about it – I did make quite a few squares of material with  Cross-stitch. Whatever the design, I did not really take notice, ( I was only eight years old) but I’m sure , with enough squares completed, if they are joined together, you could easily have a small quilt?

My eyes  were surveying  what the  older Girls were making, and how fast their fingers and hands were going – like they had a mind of their own!

I, need   to continue  this by answering  –  Why?  For What?  and More!                      *********

Continuing  –  When I was eight years old  and learning to do  Needlework  –  learning that the more you do it  –   the better you become with the project!  Also,  was learning , “Haste makes Waste.”  You need to take your time and be careful so that the small stitches produce the look and design intended for the project.  Large sloppy  stitches and carelessness won’t pass muster,    with the Nuns!

One visiting Sunday, I had told my Mother, that I was learning to do  “Cross-stitch” and she thought that was  “Terrific!” Some time later Mom brought  me some threads of various colors, and a small linen hand towel, requiring  someone to select the right colors of thread and do the design .

Well, that’s what I did, but I was in a hurry, and when I had completed it   –  I did not like the finished towel.  I could see first hand sloppy work  –  looks bad no matter how you look at it. All I could do was to now be very careful to undo everything, I had just done?

It  was close to  “Christmas”  –  and I made up my mind  –  this is going to be done right –  there’s no other way! This needs  to be done  and  done perfectly,  because I will be making this  “Towel as a gift for my Mother!”
