“Quick and Easy – Shortbread Nuggets”

These are, hands down, the best easy shortbread we’ve ever made. No rolling necessary; no pressing into a pan necessary. Make these once and you’ll likely commit the recipe to memory. These shortbread nuggets are also a great way to get kids (or less adept adults) to help in the kitchen. Whip up a batch of the dough, then set your assistant to work, breaking off bite-size pieces before baking. Consider these the new break-n-bake.

Ingredients

  • 1½ cups all-purpose flour
  • ½ cup (1 stick) unsalted butter, cut into ½-in. pieces
  • ½ cup packed light brown sugar
  • ½ cup chopped pecans
  • 1 teaspoon vanilla extract
  • ¾ teaspoon kosher salt

How to Make It

Step 1

Preheat oven to 350°F. Line a baking sheet with parchment paper. Combine flour, butter, sugar, pecans, vanilla, and salt in a medium bowl. Using your hands, work butter into dry ingredients until crumbly. Continue to work dough until it comes together when squeezed in your palm.

Step 2

Break off bite-size pieces of dough (they will look imperfect) and place on prepared baking sheet. Bake until golden and dry, 15 to 18 minutes. Let cool completely before serving or packaging.
