On National For Twelves Day (4/12), the nation will honor a magnificent number that holds significance in several ways.

We measure our days in two 12 hour sets. When we buy roses, eggs, and pastries, we purchase them by the dozen. How many months are in a year? Twelve. Of course, math lovers appreciate 12 because it has a perfect number of divisors.

Sports fans remember all the great athletes in every sport who have worn that fabulous number. For example, Terry Bradshaw, John Stockton, Jim Kelly, Dwight Howard, and Joe Namath come to mind.

And football fans wear the number to represent themselves as the 12th member of their favorite team. These vital members of the football team support players on and off the field. Especially integral to the success of the players and the teams, the celebration focuses on the fans who inspire their teams to be at their best every day.

“NATIONAL SIBLINGS DAY”

NATIONAL SIBLINGS DAY _ April 10

National Siblings Day (also referred to as Sibling Day) on April 10th each year honors our brothers and sisters. 

Siblings. They are our best friends or our worst enemies. At times, siblings will provide us with our biggest competition, strongest encouragement and remind us of our most embarrassing moments.

Fictional characters describe those siblings best who are both rivals and yet best friends. From The Brady Bunch and the Cosby family to The Simpsons and the Piersons, television siblings tell our stories in humorous and dramatic form. 

When is National Sisters Day?

However, real-life royal siblings Queen Elizabeth and Princess Margaret had a different set of rules to follow making their relationship quite different from anything we would call normal. Being a queen will do that. Queen Elizabeth’s grandsons, Princes William and Harry and William’s children, too have royal sibling relationships that engage the world. 

Playing fictional characters who are siblings and being siblings in front of a television audience must have created a different lifestyle for Mary Kate and Ashley Olson. Their older sister is Elizabeth. Another pair of sibling actors is Shirley MacLaine and Warren Beatty. And don’t forget the exuberant Tia and Tamera Mowry. 

When is Brother’s Day?

There have been plenty of presidents with siblings as well. George W. Bush has five siblings and William Jefferson Clinton has three.

NATIONAL SIBLINGS DAY HISTORY

In 1995, native New Yorker, Claudia Evart, founded National Siblings Day to honor and celebrate siblings.  After losing her two siblings early in life in separate accidents, she knew how important siblings could be in our lives.

Claudia created the Siblings Day Foundation (SDF), a tax-exempt organization, whose goals included the establishment of the national holiday. Claudia selected April 10th in honor of her late sister, Lisette’s birthday.

“Lemon Meringue Cake”

Easily make this fresh and bold Lemon Meringue Cake recipe for springtime.
It features my best vanilla cake, Homemade Lemon Curd & Meringue Frosting!

Hi Bold Bakers!

I adore lemon meringue pie and I love cake! So I’m going to show you how to get a really bold combination with my Lemon Meringue Cake.

To break it down for you the cake is made up of three components: yellow cakelemon curd and of course meringue frosting. These different textures and complimenting flavors make for one Big & Bold Cake.

My recipe for lemon curd is really simple. Think of a lemon curd like a custard made on lemon juice. Sometimes you can find recipes that are fussy but not mine. You will have amazing results 100% of the time. Also lemon curd should be waiting in the back of your fridge regardless whether you make this cake or not. It can always be put to good use. Also, save the egg whites you have leftover because you can use them for the frosting. Waste not want not. Speaking of which, make sure to check out my Bold Baking Basics post and video on the best way to juice a lemon.

Now, the meringue frosting is probably the best part of this cake. Fear not, meringue is incredibly easy to make. Just watch the video above and follow my step-by-step instructions and your cake will turn out just like the one in the picture.

Ingredients

  • 3 cups (45 0g/15oz) cake flour, sifted
  • 2 cups (48 0g/16oz) granulated sugar
  • 4 teaspoons baking powder
  • ½ teaspoon salt
  • 5 large egg whites , at room temperature
  • 1 whole egg , at room temperature
  • 1 cup (6 oz, 170g) whole milk o r full fat buttermilk
  • 2-1/4 teaspoons pure vanilla extract
  • ¾ cup (170g, 6 oz) unsalted butter, cold
  • 1 recipe of Lemon Curd
  • For the Meringue Icing:
  • 3 large egg whites
  • 3/4 cup granulated sugar
  • pinch salt
  • 1/2 teaspoon vanilla extract

Instructions

  • Heat oven to 350 oF (180oC). Butter and line three 6-inch cake pans with parchment paper.
  • In a large jug combine and whisk together the egg whites, whole egg, milk, and the vanilla extract. Set aside.
  • In the bowl of an electric mixer fitted with the paddle attachment, combine the dry ingredients together on low speed for 1 minute. (You can also do it by hand)
  • Add the cold butter and continue to mix on low until the mixture is a fine crumbly texture.
  • Add the liquid mixture into your dry ingredients in 2 separate batches making sure to scrape the sides and bottom before and after each batch, mixing until light, fluffy, homogenous and well incorporated. Fold once or twice to ensure the batter at bottom of bowl is incorporated.
  • Divide the batter evenly into the prepared pans.
  • Bake until a cake tester comes out with a few crumbs when inserted into the center, about 25-35 minutes. Be very careful to not over-bake. Check cake at 25 minutes to see how it is doing and judge the timing from there.
  • Once baked, let the cake cool on racks for 20 minutes before removing them from the tins.
  • Slice the cakes in 2 to create 4 layers. Generously spread lemon curd between the layers of the cake.
  • For the Meringue icing: Place the whites and sugar in the bowl. Whisk to combine.
  • Place the bowl over a ban marie. Whisk constantly, heat the egg white mixture until the sugar dissolves and it is warm to the touch.
  • Once warm, transfer the bowl back to the mixer. With the whisk attachment, beat the egg whites on high until medium-stiff glossy peaks. Add in the salt and vanilla and mix until combined. Use immediately.
  • Spread the meringue frosting all over the cake. Take a torch and toast the outside of the cake.
  • Store the cake at room temperature for up to 3 days.

Observed each year on April 10th is National Encourage a Young Writer Day. Do you know a young person who has a vivid imagination, maybe someone who likes to tell stories and reads a lot of books?  These may be the signs of a great young writer.

National Encourage a Young Writer Day would be a good time to talk to them about their ideas and dreams. Encourage them to pursue their goals and develop their writing skills.

HOW TO OBSERVE #EncourageAYoungWriterDay

There are many ways to support a writer. We supply you with several ideas for National Encourage a Young Writer Day, too!

  • Give a journal.  A journal provides a place for daily writing. From short poems to inspired essays, this is a place young writers can feel free to stretch their wings unjudged.
  • Offer writing prompts. These random bits of inspiration can come from the most unlikely sources but often generate unexpected results. Prompts are available all over the web, as well as in books and apps.
  • Encourage them to read. The more they read, their experience with writing and writers will expand.
  • Have young writers try multiple writing styles and different voices. Changing perspective will keep their writing fresh, allowing them an opportunity to find their personal style.
  • Create a young writers group. It’s a good way to see their story from the reader’s point of view and to receive feedback from peers.

Give a young writer some encouragement and use #EncourageAYoungWriterDay to post on social media.

“Easy Lemon Bars Recipe”

Hi Bold Bakers!

This recipe is long in the making! Since the birth of Bigger Bolder Baking have all been asking for an easy Lemon Bars recipe. Well, brace yourselves!

It’s finally here!

My Lemon Bars Recipe has all the best bits of classic lemon bars, but made even easier. Some lemon bars require pre-cooking the filling, or extra equipment, but these tangy & rich lemon bars are made in one bowl and by hand.

Made with a classic sweet and buttery shortbread base topped with a super fresh lemony custard, these lemon bars boast a crackle top, gooey center, and crunchy sweet base. Basically, these lemon bars are going to make all of your friends and family swoon!

What is shortbread?

Shortbread, or shortcrust pastry, is the beginning of my easy lemon bars recipe. Shortbread is defined by a super crunchy and flaky texture that has a sweet flavor. Made by hand with just butter, flour, powdered sugar, and granulated sugar, you can imagine why this crust is also the base of millionaire’s shortbread — as they taste like a million bucks.

The rich sweet crust bakes ahead of the filling to ensure it’s cooked through. After baking for 25 minutes, I fill them will the custard filling and then it’s just a matter of time!

How do you make this lemon bars recipe?

These homemade Lemon Bars are made with an easy lemon custard filling. Made by combining egg yolks, sugar, and lots of fresh lemon juice and zest, the filling of this lemon bar has all the component of the best homemade lemon curd.

The difference is that there’s no fussy cooking over a stove or worrying about curdled eggs. All of the ingredients are combined then poured over the shortbread crust. They bake somewhat low and slow, and this is what allows the lemon custard filling to develop its thick custard center and golden brown top.

Ingredients

Butter Shortbread Crust

  • 2 tablespoons granulated sugar (caster sugar)
  • 2 tablespoons powdered sugar
  • 1 1/4 cups (6 1/4 oz/177g) all-purpose flour
  • 10 tablespoons (5 oz/142g) butter, cubed and softened

Lemon Filling:

  • 8 egg yolks*
  • 1 1/2 cups (12 oz/340g) sugar
  • 1/2 cup (4 oz/115g) butter, at room temperature
  • 1 teaspoon vanilla extract
  • 4 lemons, juiced and zested (about 3/4 cup juice )
  • 1/2 cup (2 ½ oz/71g) all-purpose flour   (See Notes)
  • 1 1/2 teaspoons baking powder   (See Notes)
  • powdered sugar, for dusting

Instructions

NOTE: THIS RECIPE HAS BEEN EDITED ON 9/6/2018 TO MAKE ADJUSTMENTS TO THE FILLING. WE HAVE RESOLVED ANY ISSUE WITH THE RECIPE.

Shortbread Crust:

  • Preheat your oven to 325oF (170oC) then butter and line an 8×8 inch baking tin, set aside. 
  • In a large bowl combine the sugars and the flour. Next rub in the butter until you’ve reached the texture of coarse breadcrumbs. Continue to bring the shortbread together using your hands until the dough forms a ball.
  • Transfer the shortbread dough to your lined baking tin and press into one even layer using your fingertips and the palm of your hands. Then prick the crust all over with a fork.
  • Bake the shortbread crust for 25 minutes. While the base is baking, make the lemon filling.

Lemon Filling:

  • In a medium bowl combine the egg yolks, sugar, soft butter, vanilla extract, lemon juice, and zest then mix to combine. If the mixture looks a bit separated, don’t be alarmed. 
  • UPDATED STEP: lastly, whisk in the flour and  baking powder until there are no lumps. (We added this step 2018 to rectify lemon bars that were not setting)
  • Remove the crust from the oven then fill with the lemon filling. 
  • Bake for 40-45 minutes until the top has formed a crackle crust and is golden brown.
  • Allow to fully cool before dusting with powdered sugar and cutting into squares. 
  • Cover and store in the fridge for up to 4 days.

Recipe Notes

*Flour and baking powder were added to this recipe after the video launched. It’s important to add it as it sets the lemon filling. 

*Save your leftover egg whites for meringue recipes and you can even freeze them for later.
