“Zucchini Slaw – Quick and Easy”

Recipe of the Day

Name: Zucchini Slaw

Prep: 10 minutes 

Cook: none

Total Prep: 10 minutes + 1 hour chill 

 

Ingredients:

Slaw:
2 small or 1 medium zucchini, coarsely shredded and well drained
1/4 cup finely chopped onion 
1 cup coarsely shredded carrot

Dressing: 
3 TBSP mayo
1 TBSP apple cider vinegar
1/2 TSP sugar
1/4 TSP salt & pepper to taste.

Instructions:

Mix dressing ingredients, toss in veggies. Cover & refrigerate for at least 1 hour. Serve.

For those that like something  – quick and easy  – and so good for the body – think, that  I will  just  double this  easy to make  recipe –  I just know,  that I will want seconds – as well as the next person, standing in line,  for their extra special second portion, too!
