“Pinto Beans with Bacon”

Black beans, white beans, or light kidney beans can be used instead of pinto beans if you like.

Makes about 8 servings

Ingredients

  1. 2 cups dried pinto beans, sorted and rinsed
  2. 4 slices bacon, chopped
  3. 1 small onion, chopped
  4. 2 cloves garlic, chopped
  5. 3/4 teaspoon salt
  6. 1/4 teaspoon ground black pepper
  7. 3/4 teaspoon hot sauce
  8. Garnish: chopped green onion
Instructions
  1. Soak beans in water to cover by 2 inches for 8 hours or overnight. Drain.
  2. In a large Dutch oven, cook bacon over medium heat until crisp. Remove bacon with a slotted spoon, and let drain on paper towels, reserving drippings in pot. Add onion and garlic in hot drippings; cook, stirring frequently, until tender, about 5 minutes.
  3. Add beans to pot along with water to cover by 1/2 inch. Bring to a boil over medium-high heat. Reduce heat, partially cover, and simmer, stirring occasionally, until tender, about 2 hours, adding just enough water as needed to keep beans just covered. Stir in bacon, salt, pepper, and hot sauce. Garnish with green onion, if desired.
